This was my first attempt at making a cheesecake in the Instant Pot. I used this recipe to make my cheesecake. Even though I have the 8 quart Instant Pot I didn't have a small enough spring form pan to fit inside. So, I gave it a go with one of my 8" cake pans and hoped for the best. The recipe calls for a 7" pan so I knew mine wouldn't be as tall as the one pictured in the link above.
I put a piece of parchment paper on the bottom and after the cake had cooled in the fridge over night I was able to get it out of the pan with no problem.
Let me tell you, once you make a cheesecake in the Instant Pot, there is no going back. It is so much easier and no fuss at all. It is super moist. Even the crust, it's easy to cut through with a fork. I topped this one off with some left over homemade cranberry sauce. It was super delicious.
