I'm so happy to do Elsie's birthday cake again this year. It is always a pleasure and an adventure to do a cake for one of my favourite families! This was my first attempt at making glass candy. After the second attempt of making the glass I realized that my candy thermometre was most likely faulty. Each time the melted sugar turned amber and thus made the blue turn green. On the third batch I got it right. A good thing because I was running out of corn syrup fast!
Cake: 8" and 6" 3-layer lemon cake with cream cheese icing.
