Easter Oreo Delight

I made this yummy dessert to take to Easter dinner with Mr. T's family.  I love a no bake dessert.  I followed this  recipe . Instead of crushed Oreos as the topper I added broken Cadbury eggs.  Instant Easter dessert.

Easter Carrot Cake

This year for my family's get together I made this cake for Easter.  Flecked with dark brown dye to give a robin's egg look and topped off with some Cadbury chocolate mini Easter eggs. Cake: 8" 3-layer carrot cake with cream cheese icing

Easter Carrot Cake

For the Coles family Easter dinner I went with the classic carrot cake with cream cheese icing.  It's a family favourite.   With the leftover icing I dyed it orange and piped on the tops of carrots then cut up green straws for the greenery.  Each person got a "carrot" with their piece. Geoff was excited for his piece and didn't want to wait for a plate of his own.

Easter Desserts: Amazing No Bake Cheesecake and French Vanilla Cake

Today we celebrated Easter with my Dad's side of the family in North York.  I volunteered to make the desserts (shocking, I know).   Cheesecake always goes over well with this family.  Normally I shy away from the no bake recipes and go all hardcore where you need to start at least a day in advance, but I had run out of time since I only started this morning on the desserts. I found this  recipe  on Pinterest and saw that it called for sweetened condensed milk and was intrigued.  I topped it off with fruit spread with strawberries, blackberries and raspberries.  This was really good cheesecake!  I highly recommend trying this recipe, it is not your typical no bake cheesecake. For the second dessert I made a vanilla cake using the vanilla my parents brought back from the Dominican. This was a 3 layer 9" cake with buttercream filling and icing.  I decorated this pretty rustically with some multicoloured dragees.  Both de...

Easter Eggs Carrot Cake

For our family Easter dinner this year I made a carrot cake.  This was a 3 layer 9" cake with cream cheese icing. I loved the Instagram shot so I'm using it in my blog.  My inspiration came from a cake I found on  Pinterest .  My cake wasn't quite as high or my egg cutter was larger.  Because I was using cream cheese icing it was off white so I didn't want to put just white eggs all around.  Instead I used different colours including some marbled ones of all three colours.  I took some of the extra icing and dyed it green to add some grass as trim around the bottom. These little ducks are not as whimsical looking as I'd hoped but they were cute none the less.

Easter Bunny Cake and Macaroons

For our big family Easter dinner I volunteered to make the desserts.  I found two ideas on Pinterest that I wanted to try out. The first one is the Easter cake under  Cakes I Want to Try .  Of course I made the Perfect Chocolate Cake as the base.  To add more height to the 3 layers I added two layers of chocolate meringue.  I had some issues with making the meringue but after the 4th attempt I finally got the eggs whites to form stiff piques. So glad I bought the egg whites in a carton. Easter Bunny Cake For the 2nd dessert I made these macaroons under  Easter Time .  I used the Cadbury mini eggs from the Bulk Barn.  I don't know if you can get the almonds in Canada. Easter Nests

Easter 2012

I was planning on doing an Easter egg shaped cake for our family dinner at my parents' house, but I saw on Pinterest chocolate cupcakes baked with a full size Cadbury Cream egg inside.  Then I found cupcakes with a Lindor White Chocolate truffle inside and decided to go with these instead. For the chocolate cupcakes (I can't find the link to the original picture) I froze the Cadbury Cream eggs overnight first, placed an egg in each cup and poured the batter over top.  The eggs were cheapest at the Dollarama.  $0.69 each versus $0.89 at the grocery stores and the 3 pack was $2.99?! For the vanilla cupcakes I baked them first then as soon as they came out of the oven snipped an "X" on the top of each one and inserted a truffle.  Of course I could only find these truffles at Shoppers for $7.99 for 12. Both were iced with butter cream icing flavoured with almond extract.  Topped with a few Easter chocolate eggs.   Table humour between courses. ...
