Molly's Galaxy Mirror Cake

 Molly specially requested a galaxy cake for her 7th birthday, which I was happy to do.  It's been so long since I've done a cake, it was so strange to pull everything out of the cabinets and to make sure we had all the ingredients!  Thank you COVID! This was my 2nd time making the mirror glaze.  The first one I did for Miss E's  birthday  back in 2019.  I've learned a few things since then.  Most importantly to put the cake in the freezer for a few hours before you pour the glaze over it.  I did not do this with Miss E's cake and it melted the icing underneath a bit.  The glaze thinned out showing some of the chocolate icing.  This time the glaze set perfectly.  Now, it's still a crazy messy process but well worth it.   This was an 8" three layer chocolate cake with chocolate filling and butter cream icing under the glaze.  The lettering was done cut out with vinyl on my Cricut machine. Galaxy Cake

Miss E had been asking me for a few years to do a galaxy cake for her.  Finally I bit the bullet and went for it.  I made the Perfect Chocolate cake with salted caramel filling and covered it as smoothly as possible in chocolate ganache. There a multitude of YouTube videos available to choose from to use as a tutorial and recipe.  It's a lot of prep work for 1 minute of work and for one shot!  It turned out pretty good.  In some light you could see that the topping was melting the chocolate a bit and it was coming through, otherwise I was pleased and most importantly Miss E loved it.  I was surprised that the covering added very little flavour to the cake, which is a good thing.  I saved the left overs of the glaze in the fridge to see if I can reuse it for a later date.  Stay tuned...
